That's simply two diferant things. To make it short,
"doujinshi" are manga that aren't published by a
publishing company. More like a fanzine even if some
professional authors are also publishing some of their
works as doujinshi (usualy under another name).

Hentai stands for adult material. It's like saying "X-rated".
